Summer’s refreshing wheat-free noodle

The bar for what we eat has risen. Today, food has to taste good, be good for you, be fast to make and, for some people, be gluten-free, dairy-free, sugar-free or meat-free (or all of the above). 

As one could imagine, there are few items that hit all of those marks. 

However, our growing access to previously unknown foods lets us find foods that do. 

One of those foods is soba.

Soba is a traditional Japanese dish with long, buckwheat noodles in a cold broth made with dashi as its base.
