Corn: The color and taste of summer
Corn, a healthy food in its prime growing season, came early to the Northwest Corner this year.
Perhaps the most obvious benefit of corn is its high fiber content. Yet corn offers additional digestive benefits, according to www.whfoods.org. Not only does it keep us regular, it can also encourage the growth of fatty acids in the large intestine, lowering the risk of intestinal issues, including colon cancer.
The protein and fiber that regulate our digestive systems do the same for our blood sugar by evening out the intake of sugar from the digestive tract to the bloodstream.
