A s the rain patters softly against my office window, I sit at my desk contemplating the lunch menu from several restaurants and hot tables here in my Lakeville neighborhood.

I see starch, starch and starch, modified with some fat and protein. I’m sure a lot of salt is lurking in there, too.

It makes my stomach hurt just to think about it.
